The meal featured a Halloween-inspired \u201cmonster mash\u201d recipe featuring Okinawan sweet potatoes.<\/p>\n\n\n\n<p>This effort builds on the Hawai\u2018i State Department of Education\u2019s goal of\u00a0<a href=\"\/ceb\/ConnectWithUs\/MediaRoom\/PressReleases\/Pages\/Over-70-O\u2018ahu-public-schools-offer-fresh-local-poi-to-students-and-staff-.html\/\">increasing local menu <\/a>offerings\u00a0to students.\u00a0<\/p>\n\n\n\n<p>\u201c\u2018Uala is a great substitute for any starch in a meal,\u201d said HIDOE dietitian Lindsay Nakamura. \u201cIt grows abundantly in Hawai\u2018i\u2019s soil and can be purchased at local grocery stores relatively all year long. It&#8217;s a very versatile vegetable that can make any plate fun and colorful.\u201d<\/p>\n\n\n\n<p>The Department purchased approximately 2,500 lbs. of \u2018uala from several local farmers, including Jian Jun Zhang and Kendall Van located in H\u0101m\u0101kua on Hawai\u2018i island, and Robert Mata\u2019s Oby&#8217;s Farm in Waikap\u016b, Maui.&nbsp;<\/p>\n\n\n\n<p>Some participating schools served the local \u2018uala alongside kalua pork with cabbage, lomi tomato and fruits, as pictured below. Other schools adapted menus including roast turkey, baked chicken or chicken tenders to incorporate \u2018uala.&nbsp;<\/p>\n\n\n\n<p>As the state\u2019s largest institutional consumer of food products, serving over 100,000 students a day, the Department\u2019s farm-and-school initiative aims to enhance food sustainability in Hawai\u2018i, and aligns with\u00a0<a href=\"https:\/\/www.capitol.hawaii.gov\/slh\/Years\/SLH2021\/SLH2021_Act175.pdf\" target=\"_blank\" rel=\"noreferrer noopener\">Buhat 175<\/a>, nga nagtutok sa pagpalambo sa panglawas sa mga estudyante samtang nagsuporta sa lokal nga mga mag-uuma.<\/p>\n\n\n\n<p><\/p>","protected":false},"excerpt":{"rendered":"<p>In celebration of October as National Farm to School Month, nearly 60 Hawai\u2018i public schools incorporated locally grown \u2018uala (sweet potato) in school lunches for students and staff.
